Greetings!
March is that month for buds to decide to bloom or to get stunted by
another freeze – our vote is for warmer weather! It’s also the time
to celebrate with our Irish friends for St. Patrick’s Day! And April
is not far behind- flowers, thoughts of Spring and time for gardening.
JD & I wish you a “blarney of a good time” and are green with
envy that you aren’t here spending time with us! We have some great specials
coming soon, so be sure to read the monthly newsletter on line!
Sunday Brunch
Our Sunday Brunches continue to be popular. Come join us!
It’s worth a visit just to see what our “regulars”- the Wild & Wacky
Brunch Bunch are doing. They bring table decorations, music(?)
makers and have a fabulous time – sometimes they even enjoy the food! Reserve
your space early. The next dates are: March 18, April 15 (Easter
Sunday), May 20, and June 10.
The price is still $15 + tax per person. All brunches begin at 1:30

More Food…This Irish recipe
goes great with corned beef for your St. Patrick's Day menu!
Colcannon
Makes 6 servings
6 servings of your favorite mashed potatoes
2 tablespoons butter
1 cup finely shredded cabbage

1. Make mashed potatoes, using your favorite recipe (It takes a lot of
mashed potatoes to feed Peggy’s brothers.)

2. Sauté cabbage in butter until crisp tender and stir them into
the hot mashed potatoes. Add salt and pepper to taste. Enjoy!

3. Want to add a little more green--- add some chopped fresh parsley.

Jim & Ariel Fron – Former guests who have retired to Union
and help me with whatever needs done! A true blessing from God!
Naida- also pitches in when needed, especially with large parties
and weddings (long-time helper and friend)
My family – Mike, Marty, Jodi & Jaren and Mark, Tisha &
Zachary (& new baby Josie due in June) help with whatever, whenever!!!
Mom and Dad are even pressed into duty when visiting!

February 2001 - Newsletter
Greetings!
JD & I wish you a heart-filled February and Valentine's Day! We're
busy getting ready for a Valentine's weekend, taxes, working on the tea
cookbook AND maintenance, maintenance, maintenance! This old house is always
begging for something! We'd love to have you visit soon!
Sunday Brunch

More Food…
This pie is easy to make and has a great taste and texture!
Chocolate Chess Pie
Makes 2 pies
2 Deep dish unbaked pie shells
3 1/4 cups sugar
5 Tablespoons cocoa
4 Tablespoons regular flour
5 Slightly beaten eggs
2 ½ teaspoons vanilla
2/3 cup evaporated milk
1 stick margarine/butter, slightly melted
1. Mix sugar, cocoa, flour, eggs, vanilla and milk in mixing bowl and
beat until well blended. Add melted margarine/butter and
stir until just blended.
2. Pour into pie shells and bake in a preheated 350-degree oven for
40-50 minutes until center doesn't jiggle. If crust browns too quickly,
cover edges with foil strips or lower oven temperature to 325 and continue
baking. Top will appear crusty when done.

Do you listen to Union’s WBCU radio? I still do the WBCU Cooking Show
on at 10:35 on Wed- Thurs-Fri each week on 1460 AM on your dial.
Copies of recipes can be obtained form the radio station.
JD now "writes" the Cooking Inn-style column for the Union Daily Times
(Saturday). He has promised not to include too many tuna & salmon
recipes.
I occasionally teach a cooking class at Home & Garden Classics Shop
in Spartanburg, SC. The next dates are March 8 and May 10. Call

a topic with a guest speaker and/or demonstration.
